Scrumptious, Simple, a Sure Bet. . .

We love healthy recipes and this yummy one is a sure bet to delight your picky eaters! Roasted, Okra develops a wonderful seared flavor in the oven and it’s full of antioxidants. It’s also rich in vitamin C, calcium and high in soluble fiber – a cholesterol reducing power food – bonus!  Makes 4 servings.

24 fresh okra pods, whole or sliced 1/2 inch thick
1 tablespoon plus 1 teaspoon olive oil
2 ¾  teaspoons kosher salt, or to taste
2 ¾ teaspoons black pepper, or to taste
Pinch of thyme (optional)
1. Preheat oven to 425 degrees F (220 degrees C).
2. Place in bowl and drizzle with olive oil, sprinkle with salt and pepper to taste.
3. Arrange the okra in one layer on a foil lined cookie sheet. Bake in preheated oven for 10 to 15 minutes.
